What does the formula “12345” mean? Let’s look at the correct procedure for boiling eggs!

First, with boiled eggs, you should choose fresh eggs. You should choose eggs with shells that do not have black spots, cracks, and are darker in color because they are good eggs. Use your hand to touch the egg shell, if it feels a bit rough, the egg is fresh. Do not choose eggs with smooth shells because they are eggs that have been stored for a long time. Gently shake the egg, if you hear a noise, you should not buy it because it is an old egg. 

When you buy eggs, wash them by hand and let them drain. When washing eggs, check to see if the shell is intact. If there are cracks, the eggs will break when boiled.

Pour an appropriate amount of water into a large bowl, add 1 teaspoon of salt, 2 teaspoons of white vinegar, stir well. Add the eggs and soak for 3 minutes to let the eggs absorb some water inside. This will make the boiled eggs taste fresher and softer.

At this point, you will surely wonder whether to put water in the pot and boil the eggs with cold water or boiling water?! Know that if you boil eggs in a pot of cold water, the eggs will be soaked in water longer, the boiling time will also be longer. Therefore, the eggs will easily be overcooked, the taste will not be fresh and soft. And when you wait for the water to boil before putting the eggs in to boil, the eggs will be exposed to hot water suddenly, which will easily lead to cracked shells, easy to break…

The correct way is to put hot water in the pot. The temperature of the water to boil eggs is about 60°C. Because the coagulation temperature of the egg yolk and egg white is about 60°C. Therefore, when you put the egg in 60°C hot water, it will help the egg yolk and egg white adapt to the temperature and start to solidify quickly. When the temperature reaches about 73°C, the whole egg will solidify. If you boil the egg for a long time at 100°C, the water molecules will be squeezed out of the protein molecules in the egg. This will cause the egg yolk to become very dry.

How to determine the simplest water temperature without a thermometer?! Just look at the bubbles at the bottom of the pot. When you start to see many small bubbles appear at the bottom of the pot, it means the water temperature will reach nearly 60 ~ 70°C. At this time, you put the eggs in to boil. The time to boil the eggs is 4 minutes and the eggs will solidify.

After 4 minutes of boiling the eggs, do not rush to take them out. First, turn off the stove and soak the eggs for about 5 minutes to  fully cook them . After taking the eggs out, do not rush to peel them directly. That will not only burn your hands but also cause the egg layers to peel off easily, which is not beautiful. What you need to do is prepare a bowl of cold water, tap it gently and drop the boiled eggs in, soak for about 2 minutes. At this point, you will see that the egg shell is very easy to peel and almost separates from the egg white layer easily.

So, to summarize the main steps to boil delicious eggs, you need to pay attention to the following 3 points:

1. Remember the formula “12345” means soaking eggs with 1 teaspoon of salt and 2 teaspoons of vinegar for 3 minutes. Vinegar can soften the eggshell, causing the salt to penetrate the egg and form sodium glutamate, making the egg soft and easy to peel. Then boil for about 4 minutes , then soak in hot water for 5 minutes , the egg will be cooked, especially fresh and soft, not “old” or dry.

2.  Boiling eggs in cold or boiling water is a mistake ! You should boil eggs in hot water at about 60°C so that the eggs solidify quickly. The short boiling time helps reduce water loss inside the eggs and keeps the eggs soft and not dry.

3. Do not peel the egg immediately after boiling. Gently crack the egg shell and soak it in cooled boiled water for about 2 minutes to cool the egg and lubricate the gap between the shell and the egg white. This way, the egg shell will be easy to peel and will fall off immediately.
